Upside Down Cake

 
 

 

 
 

2 tablespoon butter
1/2 cup brown sugar

melt together in heavy skillet
let cool

batter
1 egg
1/2 cup sugar
1 cup pastry flour
1 teaspoon melted shorting
1 teaspoon vanilla
8 slices of pineapple (drained)

beat egg till light
add sugar and beat well
sift flour and B.P.
and add alternately with milk and vanilla

arrange pineapple slices on brown sugar mixture
cover with batter and bake in moderate oven 20 min.

serves 6

Cool oven 250°F
Slow oven 250–350°F
Moderate oven 350–375°F
Hot oven 375–450°F
